I have been cooking all of my life. I enjoy creating dishes that are pleasing to the eye as well as to the palette. I love learning and trying new techniques in the kitchen. I have a combined total of 31 years of kitchen experience. I am a team player, dependable, dedicated and hard working.

Responsibilities include: opening duties, cooking breakfast for roughly 150 covers each morning, by myself. I also work on prep for the dinner shift. I do have a considerable amount of knowledge with Hispanic foods and flavorings. Because I am currently enrolled in Culinary School I have switched to the evening shift and am responsible for closing duties ie: correctly arranging food storage in the walk in, making sure everything is properly labeled and contained. Cleaning of all equipment and make sure everything is off. I also make a list of items needed to be prepped the following day, including items that need to be ordered or are low.
Deerfield Episcopal Retirement Community

I was tasked with checking all temps of freezers, walk ins, steam wells. I cooked for 300 residents daily. Breakfast, lunch and dinner. Our menus were on a rotating schedule and included: lamb chops-cooked to the resident’s choice, salmon, mahi, prime rib, paella. Also all sauces (bechamel, demi, marsala etc) were my responsibility
Bone and Broth Steak Bistro

Responsibilities included preparing all salad mise, a lot of knife work. During dinner service I prepared all vegetable sides, farro rissotto, root vegetable melange. This restaurant catered to their customer’s allergies and special needs. I am very familiar with food allergies. I also learned cooking steaks, fish, burgers and lamb to temps.

I was an opener and a closer, oftentimes was the only person on the line cooking, doing dish and cleaning. I learned vegan and gluten free cooking. Breakfast service set up included biscuits, bacon and sausage. I often worked egg station-tons of omelettes.
