QC MICROBIOLOGICAL, PHYSICAL AND CHEMICAL ANALYST AT BARRY CALLEBAUT DOUALA –CAMEROON (01/09/2016- PRESENT)
Tasks:
-Establishment and follow up of Standard Operating Principles (SOPs)
-Performing of routine pathogenic and nonpathogenic microbiological testing of environmental samples, water samples(with the application of membrane filtration method), compressed gasses (by air sedimentation and the use of and automatic air sampler), and finished products (cocoa powder, cocoa liquor and cocoa butter) for the detection of hygiene indicator microorganisms like Enterobacteriaceae, Total Germs Count, Yeasts, molds Salmonella and Thermophiles .
-Performing of required data analysis and compilation of results for review
-Preparation of culture media (through heating in water bath for specific timing and through sterilization) such as Violet Red Bile Glucose (VRBG) for enumeration of Enterobacteriaceae, Plate Count Agar (PCA) for enumeration of Total Germs Count, Yeast Glucose Chloramphenicol (YGC) for enumeration of Yeasts & Molds, Chromogenic agar (for salmonella detection), XLD (for salmonella detection), Muller Kaufman Tetrationate Novobiocin (MKTTN for salmonella detection) MSRV ( for salmonella detection), Yeast Extract Agar (for Total germs count in water), Rebecca & TBX agar (for Escherichia coli enumeration), Buffered Peptone Water broth(BPW) and Triptone Salt Broth (TSB).
-Interpretation of test results, comparing them with established specifications and controlling limits in order to make recommendations on appropriateness of data for release
-Performing of microscopic microbial colony counting, utility sampling and environmental monitoring
-Performing of chemical testing of in-process and finished products for evaluation of pH values, percentage Free Fatty Acid content in cocoa butter (through titration and automatic spectra-photo meter) and evaluation of color properties of liquor.
-Performing of Physical testing of finished products by evaluation the fineness of liquor and cocoa powder, percentage fat content in liquor, moisture content in cocoa butter and cocoa beans
-Follow up of purchase and supply of lab provisions and their quality control
-Follow up of GMP compliance and testing
-Participation in cleaning and process validation activities involving microbiology
-Conduction of investigations of microbiological data deviation results and implementation of corrective actions
COCOA AND COFFEE BEANS PHYSICAL QUALITY CONTROLLER AT NEALIKO CAM PLC (2013 - 2016)
-Physical Quality evaluation of freshly supplied cocoa and coffee beans for grading and purchase
