Those who become leaders in professional kitchens - Executive Chefs and Sous Chefs - are like the conductors of a great orchestra. They must find the right team and ensure that they’re trained to create engaging culinary experiences together. Those who pursue careers in the culinary arts are ARTISTS in the truest sense of the word. Artists tend to take the “path less traveled,” to quote the poet Robert Frost. They tend to be driven by a passion for creativity and experiences. Professional artists also take their craft seriously, learning from those who have gone before to perfect their skills. They’re called the culinary and pastry ARTS for a reason: you’re artists when you’re in the kitchen. Like painters, sculptors, and musicians, you’re constantly creating and experimenting. A playful and open mind is critical to expanding your creative gifts. And the food business is exactly that: a BUSINESS. There are practical skills you need, like understanding costs and margins, making purchasing decisions, and building menus and other marketing materials. If you open a restaurant someday, how do you “pitch” the idea? That has a structure, too. It’s important to balance training in the culinary and pastry arts with practical business skills. This combination of artistry and business knowledge gives you exactly what you need to pursue your passion as your vocation — and sets you apart from your peers who don’t pursue an education.

BALANCING THE CULINARY AND PASTRY ARTS WITH THE SCIENCE OF BUSINESS 3

WHAT IS HOSPITALITY & RESTAURANT

OPERATIONS MANAGEMENT?

While an understanding of the culinary and pastry arts are helpful, hospitality & restaurant operations management specialists deal with bigger picture concepts such as restaurant management, food and beverage merchandising, purchasing and cost control, and hiring and leading teams both in and out of the kitchen.

WORK ON THE BUSINESS SIDE OF HOSPITALITY

AND FOOD.

Those with a Hospitality & Restaurant Operations Management degree are well-suited for careers in both the food and hospitality industries, including hotels, resorts, spas, & more. WHAT ARE THE BAKING &

PASTRY ARTS?

The main difference in the pastry arts is one of science and technical skill. Whereas the culinary arts tend to be more flexible in process, pastry arts creations require per- fect measurements and great attention to details such as altitude and even humidity. The hands of the pastry artist are akin to those of a surgeon: each move must be made with precision, and one mistake could be a disaster. THE BAKING AND PASTRY ARTS ARE SIMILAR TO

TRADITIONAL CAREERS

Traditional careers are what most people think about as far as being a professional. Those who pursue professional careers typically work for others as employees, looking to move up in an existing company or by finding a job in another company.

Traditional career professionals take on less risk than those who pursue alternative and entrepreneurial careers. With benefits like paid time off and vacations, traditional career professionals also tend to have more predictable schedules than the other two options.

ENTREPRENEURSHIP

When people think of entrepreneurship in the food

business, they typically think about starting a food truck, café, or restaurant. But it can also mean creating consumer packaged foods for sale in farmer’s markets or grocery stores, among many other choices.

The key differentiator with an entrepreneurial career is one of risk and predictability. Because entrepreneurs own their own businesses, they take on the complete responsibility for success and also the risk of failure. However, most entrepreneurs will agree the opportunity for entrepreneurial success far outweighs the risk of failure.

ALTERNATIVE CAREERS

Alternative careers in the food business include food photography, food blogging, working as a freelance chef or consultant, or working in places like test kitchens or as culinary arts instructors.

Alternative careers can be professional in nature (i.e., being employed by others), or entrepreneurial...though they tend to be more stable and predictable than a full-fledged entrepreneurial venture.
