1. Final semester project: New Product Development- Extruded Snack Product

• Extruded snacks have very low moisture (4–6%) and water activity (0.138) making them
shelf stable
• Shelf stable, nutrient dense products deemed to be ideal to alleviate malnutrition in the
developing industry of Food Science.
• Flax seed comprises high amount of fibre and is a significant source of α-linolenic acid in the
diet of vegetarian people.
• Flaxseed carries many functional ingredients and also provide many health benefits.
• Omega-3 fatty acid, lignan and dietary fibre are major bioactive components of flaxseeds,
which can further be delivered through value added products.
• Flaxseed consumption in the diet prevents serious diseases like coronary diseases, cancer,
diabetes, obesity, gastrointestinal, renal and bone disorders.
