• Concept transition from buffet style service to fast casual. Implementation of fast casual into existing units.
• Developed a complete turnkey program for new franchisees; taking them economically from lease to key.
• Reduced unit foot print from 4500 square feet to 1800; resulting in increased profitability and affordability. Directly responsible for decreasing the unit cost by 40% while increasing the profitability.
• Led the company in new energy efficient buildings and equipment design.
• Initiated a panel of outsourced experts in equipment, construction, design and finance for strategic, planning and resourcing.
