Master's research - Ester profile of indigenous

Saccharomyces cerevisiae strains isolated from traditional alcoholic beverages.

Red wine prepared by using 23 yeast strains. Ester profile of produced wines was analysed by GC- MS

technique. Wine samples were subject to sensory

analysis on the basis of heterogenity in their ester profile. One sample was considered best among all

and that strain can be used for commercial

production of wine.
