Food Inspector Slaughter (Temporary) (This is a federal job)
Duties, Accomplishments and Related Skills:
• Conducted post-mortem inspection of poultry carcasses in a poultry slaughter establishment to determine if pathological or unwholesome conditions exist and ensure that the establishments produced a safe product.
• Effectively communicated animal dispositions to the establishment helper to assure proper handling of product and documented condemned carcasses on the lot tally sheet. Communicated with plant management regarding evisceration line issues (long hocks, contamination of carcasses, product handling, insanitary conditions, water temperatures, employee hygiene, etc.)
• Determined when regulatory control action was necessary, i.e. stopping the evisceration line, and communicated with plant management regarding issues with regulatory compliance.
• Observed plant operations and verified that sanitary conditions were maintained to prevent the adulteration of product, including ensuring proper cleaning of equipment and utensils as necessary and proper employee hygiene practices. I also verified that my inspection station met the regulatory requirements for proper lighting, adequate hand rinsing facilities, and required space for the inspection stand.
Accomplishments
• While performing online inspection duties, I observed several carcasses that were purplish in color, contained congested visceras, and foul odor. Identifying the carcass as a dead-on-arrival (DOA), I took regulatory control and stopped the line. I immediately notified plant management regarding the insanitary conditions caused by the adulterated product. I also notified offline inspection personnel, who proceeded to verify establishment controls for preventing DOAs from entering the establishment. After condemning the carcass, I released regulatory control and re-started the line.
