Provided technical support for product consolidation projects. The latest project involved 35MM pounds of product transfer from one facility to another. The tasks included reviewing product specification and formula, setting up the operation process guideline, and producing plant run sample for the business group to evaluate.

Designed and produced samples such as co-extruded sausages, various ham products, roast beef, pre-cooked prime rib, deli sliced lunch meat, and pre-cooked bacon.

Reviewed operation procedures and designed data collection protocol to improve process efficiency and to reduce costs.

Products included raw sliced apple wood smoked bacon, sliced ham, export pre-cooked bacon for Australia, breakfast ham patties for Canadian and US markets, batter and breaded products, pre-cooked bacon for restaurant franchise and various meat products for frozen meals and canned soups.

Provided technical support and training for improving both product quality and process efficiency. A major project involved a $30MM in plant expansion for raw and microwave precooked bacon, and a process control project (SPC) to improve product quality for major SKUs.

Coordinated with cross-function teams such as marketing, procurement, accounting, process engineering, operations, and quality assurance to commercialize new products from concept to customer.

Provided new menu concepts and produced prototype product to support different business groups to service multiple national fast-food and quick service accounts.
