K&N’s Foods (Pvt.) Limited has major share in poultry market of Pakistan in FROZEN category both in primary and value added (Further Processed) products. K&N's has integrated poultry business in Pakistan i.e, breeding farms, hatcheries, broiler farms, feed mill and poultry processing plant with excellent cold storage chain. Company is main supplier of KFC, McDonald, KCS (K&N’s Chicken Shops), Pizza Hut and a number of renowned restaurants of the country. Company is “HACCP” (Hazard Analysis Critical Control Point -an International Food Safety Management System), ISO and Halal certified.

I joined company in June 2003 an since then I have got six promotions.

•MY JOB RESPONSIBILITIES include,

•Manage Further Processing Department comprising 700 staff with help of two Production Managers, Assistant Manager and other support staff.

•Production Planning: Keeping in view of sales and forecast and stock.

•Operations: To make sure that all the following operations are well managed in a way that production quality, quantity and productivity are maintained at set benchmarks.

•Batches Preparation

•Forming

•Cleaning and CIP

•Productivity enhancement by first monitoring the work speed then laying out the benchmarks and then achieving them.

•Man Power Utilization: Manage, Organize and get desired results from a high caliber Team of professionals including more than 450 online working staff.

•Process Control: Data capturing, Statistical analysis, Trend reports and regular suggestions for improvements.

•(HACCP) Introduction, Standardization and Implementation of Hazard Analysis Critical Control Point (Comprehensive Food safety system)

•Costing, Product or Process cost keeping in view of labour, packaging, equipment cost and other associated cost like utilities. It is ensured that cost does not exceed the maximum limit and efforts to reduce cost.

•Yield and Waste control, Efforts for optimal yield and with minimal wastage on production line either by staff training or process change and with strict monitoring

•Scheduling Resources for production keeping in view of production planning like Ingredients, Packaging, manpower, equipment and coordination with other departments for prioritized requirement

•Cleaning and Sanitation, Monitoring the Cleaning and Sanitation of machines, equipment and area and selection of cleaning agents and sanitizer with required concentration

•Staff Training, On various subjects like Food safety, EHS, GMP’s, HACCP, ISO, Cleaning and Sanitation, Communication and other production matters. Training with set frequency for existing staff and thorough orientation for newly inducted staff

•Preventive maintenance planning of equipments

•Liaison with other departments like Primary Processing, Cold store, Quality Assurance, Engineering, Finance, Administration, Security and Supply chain for different issues

•Liaison with other companies for ingredients supply, products projection and for standardization of parameters and for a number of issues

Technical Skills

TECHNICAL SKILLS:

•Hands on experience in Poultry Primary Processing and Further Processing. Familiar and fully conversant with all chicken products i.e., Raw and Processed.

•Capable of machinery operation and understanding of different brands machines and equipments for different operation like meat cutting, chopping, grinding, vacuum mixing, forming, Predusting, battering, Breading, frying, packing and freezing (IQF and blast freezer).
