Worked both 6 am shifts, in which I was in charge of the ovens, and 7 am shifts in which I was responsible of making the doughs.

I was responsible of proofing, scoring and baking the breads to the store’s standards to have them ready by 8 am at the store opening..

I had to ensure that the ovens, retarder and proofer were always working well with the adequate humidity and steam that was necessary.

Was responsible of scaling, mixing, dividing, pre-shaping and shaping all the breads: from baguettes, to sourdoughs, round loaves and white loaves among others.

I had to ensure that all the equipment, mixers, dividers, bun dividers, were always performing well and I also had to keep the equipment clean at all times.

Every day I would attend to customers and answer their questions about the breads and the differences between them and the best ways to enjoy them.

I would receive products from other bakeries and I would make sure that the invoice was correct, the products and their pricing were good and I would display them at the bakery.

Had to keep track of all the bakery supplies and every week I would make a list of all things that we would need the following week to ensure that we always had what was needed at work.

At the end of my shift I had to clean the bakery and all the utensils to keep a sanitized environment and to leave it ready for the person that would arrive first the next morning.

Opened the shop at 5 am to have the baking goods ready in time at 9 am for the bakery;s opening.

Reviewed store’s baking inventory levels every morning and requested for ingredients that were running below par stock levels.
