Carried out in-depth research on Polyphenolic and antioxidant constituents activities of Acalypha wilkesiana leaf extract in meat (chicken). Produced Acalypha wilkesiana extracts (natural antioxidant). Carried out oxidative stability, colour stability, protein percentage, pH, sensory characteristics of refrigerated and frozen chicken. The study showed that Acalypha wilkesiana leaf extract can be used to replace synthetic or commercial antioxidants in meat preservation.
