RESPONSIBILITES:
* Review all written communication ie daily/ weekly reservation rooming list BEO to determine.
* Brigades to meet our requirement of the menu knowledge.
* Work according to the brand standard and according to HACCP.
*Making purchase order of vegetable for the whole kitchen as well as fruits, dairy products, meat, etc.
* Making task for Chef De Cuisine& sous chef in the day today operation.
* Prepare and develops menus, menu engineering, recipe costing training of dishes.
* Communicate with restaurant manager for smooth running of front & back of the house. Attend the budget meeting every month
* Doing job chat and review for the new associate in monthly basic, staff hiring,
* Monitor kitchen preventive equipment list, manage culinary equipment list
* Inspect and overseas the cleanliness and maintenance of all function space, public areas& service area.
* Responsible for monthly schedule and payroll for the outlet.
* Controlling the food cost & wastages.
* Maintain consistence& quality as per the company standard.
* Assist with other departments wherever necessary maintain good working relationship.
* Responsible for stock rotation, direct purchase and control of expiry food product on the shelving.
* Knowledge of all food & beverage procedures standards, quality presentation service and products & local health& sanitation standard.
* Lead and support the junior members of the team through training
