Food Inspector / Hygiene officer
Role & Responsibilities in Riyadh Metro Project.
Daily updating freezer & chiller temperature and monitoring their temperature throughout the shift.
Daily updating and checking the food temperature in the counter and in the production area & also
Checking the food delivered for parcel in the site.
Daily checking personal hygiene of the catering staffs (hair, shoes, uniform, nails, shaving etc.)
Updating all the uniforms, shoes delivered to the staffs on regular basis.
Preparing schedule and updating it for the catering department.
Preparing training plan and giving training to the catering, housekeeping and laundry staffs in the
Camp premises.
All training updates & modules received from clients (RMTC / BECHTEL) is delivered and trained
Through proper channels.
Daily updating hygiene checklist. (HACCP)
Training is given to production staffs regarding temperature, holding time, secondary responsibilities.
Training is given to utility staffs for safe handling chemicals and how to use it, proportion, mixing etc.
Alkaline and Acids are always kept in separate in different cabinet in the janitorial room.
Training regarding Use of spill kit, drip pan, eye wash station is explained to all the staffs.
Fire drill training is also given for catering, housekeeping and laundry staffs. (Assembly Points)
Deliveries received for the store is monitored and checked along with the store keeper (FIFO,
Organization, Stocking heights, production & expiry dates)
Store helper is trained for doing store deep cleaning when there are minimum stocks in the
Freezer and chillers.
Baladia medicals are done for food handling staffs in catering department and always updated.
Typhoid & Hepatitis vaccination is done for catering staffs and is always updated.
Orientation is done for new arrival staff for catering staffs and it is updated and documented.
New arrivals and staffs come from vacation must have fitness certificate from the clinic before
Commencing the work.
Food samples are taken on regular basis and its kept in freezer in the clinic.
Daily cleaning, weekly cleaning & sanitization of equipment’s are posted in the production area.
Weekly deep cleaning of all the mess halls checklist are posted in the respective mess hall.
Daily cleaning of Exhaust & Drainages checklist is posted in production area.
Cleaning of Roof Top exhaust is done on monthly basis and is documented.
All the posters regarding safety, Awareness, chemical use regarding catering is prepared and
posted in the entire catering section.
Staffs going for vacation and all sick leave is updated and documented.
Total staffs working in catering department is always updated and is send to camp manager.
Inventory for catering section is also done.
Daily update of food temperature & food waste report is also sent to camp manager on weekly
Basis.
Pest control is carried out in the catering department on weekly basis.
Client visit like Baladia, RMTC, Bechtel is handled and walk thru is done with them.
Checking water filters in ice machine, cleaning, changing sanitization is done as per the
Schedule.
Color code is changed and updated quarterly of the year in the catering section.
Calibration of pyrometer is done on weekly basis and is documented.
