I operated the entire business and overall operations of two full service restaurants with combined annual sales of 5 million dollars. The concept is gourmet burgers, whiskey, craft cocktails and craft beer with a made from scratch approach and fresh bar ingredients. It was a microbrewery concept to operate alongside of The Blind Rabbit – A Burger & Whiskey Bar. We operated a 3BBL brewing system and focused on small batch seasonal beer with a rotating draft program. My responsibilities were managing beer releases on social media, making sure all production logs were up to date and all paper work was ready for audits.
