DUTIES AND RESPONSIBILITIES:
• Responsible for the entire operation within the Butchery section and manage the day to day operation.
• Monitor all duty schedules and roster of all Butchery staff and control work assignment.
• Manage all Butchery preparations in correct and timely manners and producing quality Butchery products that are in line with the standard.
• Conduct daily check of the product quality, freshness and expiration date.
• Monitor all aspects pertaining to the control of hotels food cost.
• Ensure HACCP standards are implemented and follow all hygiene, food safety and maintenance standards as per municipality requirements.
• Conduct job training, daily briefing and product knowledge to the fellow team members.
• Manage the daily market list and purchasing of meat, poultry, fish and sea foods based on hotels standard, capacity and reservations.
• Ensure daily rotation of all Butchery items to maintain the high quality and standard.
• Conduct daily inventory to ensure proper aging of Butchery items and control the food cost and not to over spend.
• Working closely with the Purchasing and Finance in controlling food cost budget.
• Conducting routine yield tests on present and new Butchery products.
• Assisting Executive Chef in monitoring daily and monthly Butchery expenses, researching and sourcing better Butchery products in line with the hotel standards. TRAINING AND SEMINARS ATTENDED
