Job responsibilities

Calculating day-to-day and monthly food cost.

Keep controls on Portion, Spoilage, and wastage, to achieve effective food cost.

Monitors, regulates, and recycle all material to achieve effective food production with due consideration to be cost conscious always.

Checking all the KOT/BOT and sales paper for controlling purpose.

Daily inventory of beverages and tally it with the daily sales.

Being a member of purchase committee, insure that raw material quality should be as per standard specification

Market surveys for the best sources of supply or new supply sources.

Controls and verified monthly F & B store inventory. Prepare all monthly reports and send them to account department.

Spot checking of physical quantity of raw materials in the stores.

Co-ordinates and liaison in operation matter with General manager, Executive chef and account manager

Regular checking of production date/ expiry date of all the items.

Makes recipe for food items with help of executive chef to calculate the cost price for restaurant as well as for banquet.

Attend daily briefing with Finance Controller and discuss with him about day-to-day operation.

Maintain Excise record register (L-4).

Preparation of the Menu Engineering and keep informing the Executive Chef and Food & Beverage Manager.

Conducts SOE Inventory quarterly & preparation of the Spoilage & Breakage reports.

Makes sure that information entered into FBM system is accurate, all documents attached to a daily transaction report and delivered to AP Supervisor every day.

Job responsibilities with store-in charge

Checking Three-month consumption and based on that report, makes planning for monthly purchase.

Checking production date/ Expire date / Packing/quality/quantity and rates (it should be as per contract) on receiving time. It should be as per our Purchase order

Apply FIFO where it’s applicable

Checking of all store indents that they should be authorized from proper authority and should be feed in computer accordingly.

Conducting monthly inventory at the last day of month with account dept.

Checking of all ledger / consumption statistic and report to Finance Controller.

Prepare monthly report about movable and Non-Movable items and takes action as per higher authority order.

Fixing of Minimum level / Maximum level / reorder level of each & every item as per their monthly consumption and their availability in the market.

Graduation: B.Com, Dr. Bhim Rao Ambedkar University, Agra (Year 2010),

Pre College/ Secondary (10 + 2): Science, UP Board, Agra (Year 2004),

Higher Secondary (10): Science, UP Board, Agra (Year 2002).
