Purpose of role:
Responsible for overseeing the day to day operational logistics of the Stewarding Department within Kitchens and Restaurants related areas. The scope of responsibility includes supporting the Manager Stewarding in the development of and utilisation of skills focused towards the execution of a consistent 6 star product of the highest order whilst being accountable for maintaining established financial budgets. Key focus on enhancing and protecting the assets of the Culinary and Food and Beverage Division and Resort
% of Time Spent:
25% Responsible for the daily supervision and coordination during his shifts in all outlets and kitchens. Monitor and control F&B operation equipment. Control and order stocks of cleaning supplies
25% Lead the Stewarding department’s associates. Select, train, develop, coach, manage reporting associates’ performance and motivate them to bring about excellent performance and to ensure efficient running of the stewarding department.
15% Implement company programmes and manage the operations of the Stewarding department in a manner consistent with local laws and regulations, Hotel policies and procedures, and Hotel standards to ensure a high level of service quality and guest satisfaction.
15% Maintain high visibility to ensure smooth running of operations, take corrective actions upon operational needs and hardships in order to enhance guests experience and maintain a high level of service quality.
10% Implement emergency and safety procedures and coordinate training in conjunction with the Security and Engineering departments to ensure appropriate protection for kitchens and restaurants by maintaining a diligent fire and safety team.
10% Initiate and accomplish a set of administrative duties such as leading and attending meetings, associated reports and collaterals, and other specific duties related to the role. Monitor the HACCP/FSMS concerns.
