PhD Research Expertise

• Preparation of microbeads using LAB in matrix

• Application of microbeads as a new tool for biopreservation against microbiological hazards such as L. monocytogenes, and inhibiting other foodborne pathogens such as Escherichia coli, Pseudomonas aeruginosa, Salmonella Typhimurium, Salmonella Enteritidis and Staphylococcus aureus

• Preparation of biofilm HPMC, starch with microbeads as antimicrobial food packaging. Shown a high efficiency to produced active packaging materials. The mechanical, transport and transparency properties remained adapted to packaging applications despite of capsules incorporation. Moreover, the developed films with microcapsules presented as interesting anti-listeria activity.
