1. Train and develop the food & beverage team in the departmental operating standards 2. Maintains a presence in the outlets during operating hours. 3. Maintain a consistent focus on improving the overall flow of food & beverage operations, seeking ways to maximize and improve the operation through productivity management and energy savings programs

4. To lead and support employees in the achievement of financial, operational and service delivery targets via effective organizational policy and procedural development and appropriate employee training activities

5. Foster a winning, solution-oriented work environment, motivating and engaging employees to continuously deliver the best possible service and to provide feedback and suggestions 6. To lead daily food & beverage briefings and monthly employee meetings 7. 23. Work in conjunction with the Executive chef to ensure the service team’s product knowledge of all menu items and ingredients is thorough. Planning, organization and supervisor:

o Sharing and assisting the appointment of new TMs o Check and correct if necessary the external appearance of the team o Responsible for insuring clean and orderly presentation of the restaurant at all times and reporting any related shortcomings to the relevant department HK and ENG o Issue the necessary goods and monitor their correct storage o Responsible for ensuring that machines are used and maintained according with the instructions and that work materials, food, water etc.are used economically o Organize and monitor maintenance of tidiness cleanliness and hygiene, in particular also in relation to the food order.

Sales and care of guests:

o Organize and motivate staff so that a smooth service sequence is guaranteed ensuring the satisfaction of the guest

o Carry out active selling himself and place his staff under an obligation to carry out active selling in order to achieve budget sales

o Maintain contact with guests in order to ensure their satisfaction with range on offer, the quality and service.

o Deal with complaints and Endeavour to satisfy guests who have complained immediately. 6

Administrative tasks and financial planning:

o Draw up the work schedules for the service department together with bars supervisor independently each week and obtain all the most important information in advance so that there is an efficient work schedule to enable sales targets to be met. o Monitor and calculate tips and distribute these fairly according to the tips policy as agreed and laid down in writing with F&B manager.

Communication:

o Obtain information daily on the activities in the hotel and pass this information on to staff o Ensure that all restaurant staff are fully informed of the range of drinks and food offer. o Participate in F&B meeting.

o Contact the restaurants manager & food & beverage manager if any problem. Training:

o In conformity with Hilton – policy, is responsible for specialist training and for ensuring that the internal training course is managed correctly

o Promote participation of employees in internal training courses and ensure that what has been is put into practice.
