2013 – Present - Executive Chef / Assistant Director of Nutrition

In charge of all employees including Sous Chef, Cooks, Bakers, Dietician, Dishwashers, & Servers. Responsibilities included Creating Various menus weekly, ordering, controlling costs through production sheets/ prep sheets/ waste logs/ cooling charts/ and proper use of recipes. Also included training chefs, cooks, and bakers to perform at the highest levels.

2010 – 2013 Executive Chef - Four Brothers Urban Bistro, New Castle, Pa.

In charge of all employees including bartenders, servers, dishwashers, cooks, and chefs. Responsibilities included creating lunch and dinner features, planning and

preparing for lunch and dinner service, training new employees . In charge of all

2004 - 2010 Saute` Chef- Treesdale Golf & Country Club, Gibsonia, PA

functions, opening the kitchen daily, setting up and prepping entire hotline,

creating feature items for both lunch and dinner service including tableside

service and training new employees on various positions in kitchen. Member of

2003 - 2004 Production Manager- chef Hickory Grille, Hermitage, PA

I oversaw the day kitchen operations of busy restaurant in the Springfield

Restaurant Group. My responsibilities included final presentation of plates,

creation of daily specials, control of inventory, and placement of orders with

various purveyors.

2001 - 2003 Purchasing Manager and Production Chef- Atrias’s Restaurant, Wexford, PA

I started as a sous chef and team leader and was promoted through various positions in the kitchen. I became the purchasing manager and managed the inventory for a very busy upscale restaurant.

1999 - 2001 Executive Chef- The Centre Banquet Facility, New Castle, PA

I was the executive chef in charge of a staff of 50 employees for a large full service banquet facility. Events ranged from formal sit down dinners to buffet and boxed lunches. Over 250 events per year with guest counts up to 1,200 were hosted at the Centre’s five meeting facilities. I oversaw planning, ordering, setup, preparation, and presentation of meals for all events.

1996 - 1999 Sous Chef- exec. Chef The Café` Capri, Boardman, OH

I was a sous chef for a high quality high output Italian restaurant serving several hundred plates for both lunch and dinner service, training new employees . In charge of all
