Major Duty and Responsibility For Camps & Catering

Extensive experience in preparing accommodation facilities for staff from different nationalities.

Extensive experience in operation & maintenance of large Scale Camps.

Strong Management, Organizational and interpersonal skills.

In-charge to all transport / vehicles arrangements/ scheduling, filling system and report. And Maintain Catering Service.

With the Catering Manager and one other Catering Supervisor, organize, lead and motivate a diverse team of 20-30 full-time, part-time and casual staff, ensuring that each member of staff completes their duties in accordance with the service and cleaning duties roster. Monitor staff breaks, start and finish times. Particularly in the summer months, ensure that all staff are adequately hydrated throughout their shifts. Supervise staff during all aspects of catered events to ensure high quality service standards and presentations are met.

Ensure everything is ready for service including personnel, equipment and signage.

Maintain high sanitation and safety standards in all catering storage rooms and other catering areas.

Control all labor schedules in accordance with budgeted costs.

Acquire and maintain knowledge of current food and catering trends.

Assist with hiring, training, evaluating, and supervising of all catering staff, including completing staff schedules and providing information about catering staff, related duties as assigned.

While working alongside the dining-hall and dishwash staff, monitor and maintain a high standard of cleanliness throughout your areas of responsibility. This is to include daily, weekly and deep-cleaning schedules of all of the furniture and equipment, e.g. tables, chairs, benches, trollies, salad counters, hot and cold beverage machines, trays, crockery and cutlery, etc.

Ensure food hygiene and health and safety regulations are strictly observed, including recording temperature checks of the fridge and salad counters, and recording any near misses or accidents in the dining hall.

Monitor the standard and use of staff uniform and PPE, and ensure staff have the necessary equipment and materials needed to carry out their jobs efficiently.

Encourage a welcoming, positive and enthusiastic attitude among staff. Monitor the customer service provided and suggest to the Catering Manager where further improvements and efficiencies can be made.

Programmed menu boards and ensure all staff are fully briefed on the contents of each dish. Be aware of customers with food allergies and special dietary requirements, and ensure staff are well briefed on all necessary procedures that are in place to safeguard them.

Manage staff problems and concerns promptly and fairly, referring them to the Catering Manager or Director of Catering as required.
