My name is Daniel Wiehn I am the Culinary Arts instructor at Mountain View Correctional Facility in Charleston, ME. I am writing this letter to recommend Dane Bosley for employment in your establishment.

Dane remains my Kitchen manager as this letter is being written. I can always count on Dane to be to work on time and to be ready for whatever turn the day may take. Countless times Dane would be met with a challenge to provide an unexpected meal for a dozen people without proper time to prepare. Dane would use these situations as an opportunity to shine and never failed to adapt and provide the very best quality he could within any challenge. He showed great skill when instructing new apprentices on proper kitchen etiquette and enforcing kitchen rules. Dane is always willing to help in any way he can and was often called upon by groups to speak about his personal experiences and deliver a powerful message of change and perseverance.

I would recommend Dane Bosley for any position available. He has demonstrated all the desired attributes of a great team member. Hard Working, dedicated,positive attitude, leadership skills, team work. I believe he will become an asset to any employer looking for these skills. To whom it may concern,

Dane Bosley came to the Mountain View Correctional Facility on July 1st, 2021. In June of 2022 he started the Culinary Arts program. He completed ServSAFE and began the apprenticeship program as well as taking the Rouxby Pro Cook courses. Since then, he has grown to be what I would consider, a leader in the Culinary Program team and a great chef.

Some examples of his leadership are the times the Culinary Arts Supervisor is not at work. There have been several times and for many weeks in the past that he is not here and when he isn’t Mr. Bosley keeps the culinary program running by using the proper Fifo procedure.

The procedures he does are:

1.Managing and maintaining food and paper product inventory

2.Ensuring the food is properly stored and dated while cycling out any damaged food or ones that have expired.

3.Identifying what food, paper or chemical items the program needs for the next week based on the current menu.

4.Passing this paperwork on to the culinary supervisor for authorization and purchase.

5.Receiving newly shipped goods and inspecting for acceptable state at the time of delivery. Checking for proper temperature and condition.

6.Making a record of any damaged food items or unacceptable food state upon delivery.

7.Properly dating and storing items.

There have been many times when there is a last-minute order for culinary to make a meal due to visitors coming to MVCF on DOC business. He never fails to create a good meal. In the springtime our facility have a Staff Appreciation Week part of it is having the Culinary Program serve lunch to all the staff. The culinary supervisor was out for several weeks and also during this time, however Mr. Bosey organized and helped prepare these meals for the whole week. It was a huge success.

He has become an excellent chef who is always looking for something new to try.

Mr. Bosley presents himself in a very professional and thoughtful manner. He is extremely polite and respectful and is a credit to the Culinary Arts program. He has great interpersonal skills and can talk with people at many different levels.

I wish him all the best in his new career and if I were a restaurant owner looking for someone trustworthy and a hard worker, I would look no further than Mr. Bosley.

I am writing on behalf;of Dana Bosley; this is the first time in fourteen years of working in corrections that I have done this; I have met many people that have come through the doors of the facility and left. I can think of less than ten that were prepared for release and in the right mental state, for the past year I have had regular interactions with Mr. Bosley he is smart and engaging and very well spoken I have asked him to speak in front of small groups and some large groups mostly about how he changed his thought prosses and was able to get out of that negative place he was in he would stress about these interactions but he did such a great job, he is a remarkable individual that is a hard worker and trustworthy he has been through a lot and will always have to battle the individual fights we all carry within ourselves, that said Mr. Bosley has earned my trust and respect and I hope that anyone that would read this will give him the chance to prove me right, as he would make a great addition at any place of employment.
