· As an advanced processor, job duties vary, greatly.
· Primarily, keeping all 4 pasteurizers running is the main focus. Advanced processors will know how to locate valves that need to be replaced, and rebuild said valves. Troubleshooting was a daily task on any given pasteurizer and/or separator.
· Batched all of the many different products produced at the Byrne Dairy facility. This included chocolate milks, half and half, heavy cream, and coffee creamers. Aseptic milks were introduced to the facility in 2021. The aseptic process was completely different than standard milk. Was proficient in aseptic processes as well as standard batching.
· Learned the path of the product through each pasteurizer, to troubleshoot problems. Rebuilt valves on pasteurizers.
· Learned how to use and rebuild valves for alsafes that temporarily hold the pasteurized product in a sterile environment, until it is sent to filler operators for packaging.
· Learned how to use and rebuild separators, that separate product before pasteurization.

• Over the course of 1 year I have been cross-trained in 4 different areas of production and also a certified lab tech.
• Pack out- Responsible for packing product into large totes. Totes weighed in excess of 2,000 lbs when full.
• Responsible for taking micro samples to ensure there are no microbiological organisms in the product.
• Sterilize and Sanitize line 3 times a week
• Lab Technician- Responsible for testing all samples, taken from every batch, on all 3 lines by the Pack Out Operators.
• Responsible for testing raw materials as well to maintain food safety.

• Took swabs of equipment on production lines after CIP/SIP was complete.
• Hot Break- Followed recipes to make a jelly-like fruit mixture that shipped from Agrana to different factories where the product is then mixed with yogurt.
• Added 60 lbs bags of fruit and sugar into a machine called the icebreaker, where it was then broken up into smaller pieces and mixed into a kettle with the rest of the ingredients.
• Sterilized the line after every batch and also did a deeper sterilization 3 times a week. During this process every piece of fruit was scrubbed off to prevent any kind of cross contamination.
• Tote Wash- Received dirty totes and scanned them into the system.
• Disassembled all parts of dirty totes.
• Cleaned and washed each part and totes themselves.
• Pressurized totes and tested lids for leaks.
• Sterilized totes at 220 degrees Fahrenheit
• Unitizing- Measured out ingredients for each batch.
• Scanned ingredients into the MII system to be used in batches. This helped keep track of ingredients that were on hand in the facility.

• Worked mostly individually in the P&A department. This was a secured department. It stands for Processing and Authentication
• Job duties included looking over the incoming Trade to make sure there were no errors i.e. the date or the name of the account the money was being transferred from.
• The trade then needed to be entered into the system, and there was another group that would look over the wire to make sure it was entered correctly
• This was very high stress as there were hundreds sometimes thousands of trades that came in daily and we had to make sure the wires got out by their specified time and correctly of course.
• Quite a bit was learned from this assignment. Learned to be more proficient and to manage my time as best I could even if that meant not taking my paid breaks.
• Was consistently processing the most transfers per day with a 99% rate, of processing all transfers correctly.
