Seafarer/Chief Cook The chief cook's
principal role is to ensure the preparation and
serving of meals that are both delicious and
nutritious.
In addition to directing and participating in the
preparation and serving of meals, the chief cook
determines timing and sequence of operations
required to meet serving times; inspects galley and equipment for cleanliness; and oversees proper

Chief Cook
Authority: Delegated authority by the
Master to execute assigned responsibilities.
Reporting to: The Master
The Cook is responsible for the catering
function on board.
The Cook shall order provisions, subject to
the Master's approval, to maintain the
required stock levels.
He receives, controls and arranges for
preservation of food and all the supplies
in dry and cold storage.
The Cook is responsible for the maintenance
of cleanliness and hygiene in stores and
galley.
He shall provide sufficient and healthy diets
with a reasonable degree of variety
He is responsible for all preparation of food
and shall ensure that it is prepared under
hygienic conditions.
Ensure that the oldest provisions are
consumed first, "first in - first out".
The Cook shall daily supervise the other
members of the department and monitor
that their performance is acceptable.
Mess Man
Authority: Delegated authority by the
Master to execute assigned responsibilities.
Reporting to: Chief Cook
Assisting with the preparation and serving of
food .
Maintaining the galley,refrigerated
spaces,and mess room clean at all times.
Loading Stores,Supplies and Laundry as
necessarily .
Handling of Garbage including the proper
segregation according to the garbage
Management Plan.
Ensuring that no garbage is dump overboard
without the approval of the master.
Food Attendant
Authority: Delegated authority by the F&B
Supervisor to execute assigned
responsibilities.
Providing menus.
Answering to customer inquiries.
Taking orders, serving food and drinks.
Resetting tables for the next service, and
maintaining premises clean.
