EXPERIENCE

George’s French Bistro, Wichita KS — Sauté, Grill

While employed here I learned all menu items prepared at the sauté and grill stations ranging from chicken dishes to barramundi and duck. We grilled filets ribeyes and Strip steaks nightly along with bread and salmon as well. We did all prep from scratch, creating sauces and breading fresh every night pre service. While Employed with this company I was their Executive Chef and Sous Chef after I stepped down. I handled all scheduling, Hiring, Food orders, Menu development and flavor profiles for the kitchen. I handled any disciplinary actions that needed to be taken as well as training. I butchered loins for fresh cut steaks and created the standard for the smoked prime rib that they still sell. The bone in pork chop brine that they use is my recipe as well. I helped create an inventory list and pricing on any and all food in the kitchen.
