Discover a company that is looking for a coach/mentor to take the Corporate or Franchise management team to a new level of success. I have had extensive experience as an operator with full charge of P/L. I have experience as a Director of HR including developing systems and policies to attract and retain different team levels including hourly staff (union and nonunion), management and administrative. I have trained up to 400 new hires for a restaurant opening and held diversity training for as many as 30 managers. I have had significant success as a liaison for franchise ownership and as a Franchise Director for a top 100 restaurant company.

Over the last 3and 1/2 I have spent my time working with non-profit charities and businesses like Denton County Food Bank, Catholic Charities, Salvation Army and the Red Cross. I spent over 5 months in South Texas last year assisting on food logistics to ensure food availability to the people in the wake of hurricane Harvey. FEMA contract expired not renewed due to COVID restrictions and decreased government contracts . Working with these people has satisfied my desire to give back to my community. Something that I have overlooked in my working career. I am now challenged to return to the for profit business community and offer my experience as a manager and leader of people.

Below is a consolidation of my business experience. I can provide references for these business and more information on my responsibilities as needed.

Feb 2016-June2017: Director of Operations. HMS Host Dallas Love Field Airport. Relocated from Houston Tx to Dallas Tx.

Responsible for the operations and management of 6 franchise operations. Starbucks (2), Cool River, Chic-Fil-A, La Madeleine and Paciugo Gelato. Sales increased in all locations Starbucks up 46% 2.5 to 2.9 million: Cool River up 23% to 12.2m; Le Madeleine sales up13% to 4.1m: Paciugo 9% to 1.1m. All sales exceed budget and profit increased by 23% exceeding budget by 3.5m. Manager bonus was up 300% from previous year. Staff turnover was reduced from 276% to less then100%. There was no manager turnover in the 16 months I was the Director. Worked closely with airport management and City of Dallas and TSA to ensure security compliance and business operations.

March 2014-September 2015 Great American Cookie Company. Director of Operations. Relocated from Lubbock Tx to Houston Tx. Oversight of 19 Mall cookie stores 2 TCBY stores and 6 pretzel Operations. Supervised 2 District Managers and 45 management. Wrote employee handbook and operation procedures. Developed review policy for managers and implemented bonus and reward program for management. Worked with Mall management to ensure operating compliance.

Feb 2013-March 2014 Five Rivers Food Company. (Steak and Shake Franchisee).Relocated to Lubbock Texas from Houston Texas.

Responsible for construction oversight, opening and management of the first Steak n Shake in North Texas. Worked with Franchisor and vendors to ensure opening deadline. Hired 125 staff and 4 management. Supervised the training of management over a 4 month period in Davenport Iowa. Completed 13 week OTJ training at corporate training location. Opened the restaurant to weekly sales of 40k open from 11am to 9pm. Store was to open for breakfast after 3 months. Reason for leaving: Franchisee decided that they did not want to open any further stores (had planned to open 23). My position was eliminated. I declined the position of GM. Store closed 2 months later.

April-2000 to December 2012 Director of Operations, Schapps Enterprises. Franchisee for Buffalo Wild Wings.Houston Texas

Responsible for the operations for 9 Buffalo Wild Wings. Began with Franchise and 1 store. Opened 7 more operations and remodeled 5 of them over 12 years. Hired and trained all opening staff and management. Oversight of P/L with sales in excess of 26m. Franchisee was constantly warded sales and marketing wards and made the “Legacy Award” for the best Franchise Operations last 2 years I was with the company. I was responsible for building and maintaining relationship with Franchisor by meeting monthly with Consultant, attending annual convention, serving on the marketing board for the DMA and ensuring brand compliance. We exceeded operational budgets every year and increased sales (average store sales) over corporate averages ( Corporate sales increase 3% while our sales increased by 8%).

The Franchise sold all stores to Corporate December 2012

Additionally I was Regional VP for Denny’s Restaurants in the Northeast US. I supervised 11 District Managers, Human Resources, Maintenance and Marketing Departments. The area covered over 125 stores and 7 states.

I have also personally owned and operated 4 restaurants in the State of Texas that were QSR, Pizza and Fine dining with full liquor licenses.
