The following entries cover * of the last ** years I lived in L.A. and I just moved back to the Land. In 2009, I briefly worked for LGC Staffing that contracted with Aramark for shifts at Quicken Loans Arena where I worked as both a Concessions Cook and Courtside Food Runner at a handful of pre-season games.

**Steward, full-time. Operating dish machine, sorting glass & silverware to be polished, polishing plates when necessary, trash, floors, stocking, deep cleaning during non-peak time.

$16.50/hr plus cash tip share.

Chose to find different work and expand FOH skill set. I enjoyed my job and was able to use my talent there but my decision to quit at that time was primarily based on the business's planned building demolition set for April 2020 which was cancelled due to Covid. Dear John's is still currently operating.

**Line Cook, Salad/Dessert station (garde manger). Only 8 dishes on the menu from this station, full reservation dinners almost nightly. Much of the pre-service prep was portioning for and making scratch dressing for the server-tossed tableside Caesar salad.

LOBSTER & BEER, Palms

- Seafood Tavern

(Sept 2016 to Sept 2019)

Ref: Chef Michael Anthony Gradjewski; who plays sick bass riffs.

$18/hr; no tip share.

**Line & Prep Cook. Whole lobsters as well as tails, rolls, and some other shellfish. Also prepped clam broth, chowder, nacho cheese. Other usual cutting and portioning. Also assisted with off-site catering pop-ups as business grew in it's first year.

BIGFOOT WEST, West LA

- Whisky/Cocktail Bar

(Oct 2014 to Mar 2016)

Ref: Lead Mixologist Steve Steckel; who also does sports radio.

$10/hr plus $100 avg. daily cash tip share.

**Barback; set up and broke down 4 wells each night, glass-washing by hand and bussing. Changing kegs, cutting citrus, stocking garnish and mixers for bartenders. Also cooked on a pop-up grilled cheese station on the patio for about 4 months in the summer 2015.
