July 2014 I relocated from Los Angeles, Ca .90008 to Lewisville, Texas 75067 just north of downtown Dallas, since then I have been catering corporate events and wedding receptions throughout Dallas / Fort Worth and many of the surrounding communities.

Is a luxury retirement community that houses 290 seniors. There are all 3 types of living independent, assisted, and a medical memory care center.

As the executive chef I directly supervise kitchen personnel with the responsibility of hiring, discipline, performance reviews and initiating pay increase. I ensure that kitchen provides nutritious, safe, eye-appealing and properly flavored foods; that purchasing, inventory, menus production methods portions met all federal, state and districts standards and guidelines

I estimate food consumption and purchase foods in cost effective manner. Standardize production of well-balanced, nutritional recipes to ensure consistent quality; consulting with RD/LD as needed. Establish presentation technique and quality standards. Oversee special catering events and sent 120 meals per day to a second property.

I also planned priced and purchased for all catering event held on and off the Kingsley’s property. I ensured the proper use of equipment operation/maintenance, safety and sanitation throughout the entire food service department. From January to March 2014, I worked both positions as acting food service director (DDS) along with me executive chef duties, so well that corporate office awarded me a $1000 appreciation check for my being successful.
