Was a civil engineer in the service and in charge of all new construction on base along with designing all of the plans.

Have been in restaurants for 29 years now and am very passionate about cooking. Have held every position from dishwasher to general management. I have a passion for cooking and hospitality in general. Am currently working on my second cookbook and looking forward to sharing my experience with others.

Balsam falls brewery

Shift lead, help with scheduling, menu development, food preparation, cooking, grilling, saute station. Inventory and ordering, maintaining a clean and sanitized kitchen as well as all the equipment. Running food and have great customer service skills.

Nantahala Outdoor Center

Head baker for all three restaurants, and making donuts daily for a donut truck on site. Head line cook for River's End restaurant and was in charge of main grill, saute station and coordinate all food on each ticket hits the window at the same time. Responsible for food expedite and training of new staff members. Lead cook for Big Wesser bar and grill and prep food along with preparing all bbq pork for the restaurant. Relias restaurant I prepared breakfast buffet for the guests on the property and catered to their dietary needs. General manager and I was responsible for training all new staff, hiring employees, scheduling, payroll and writing the menu. In charge of advertising, daily specials, catering events such as wedding reception and did this on location and remotely too. Bartending responsibilities and taking care of the finances for the restaurant as well. 3/2006- 4/2011

Applebee's

Worked both locations in town and was a front of house and back of house trainer. Mainly worked as a waiter and food expeditor. Took care of guests needs and was a shift leader as well, I maintained a clean and sanitized restaurant. General side work and handling money was a daily process.
