I direct and oversee daily services of the nutrition service department, directly supervising up to eight employees and general supervision of 20+ employees. Oversees and coordinates food service for all patients and visitors, which could be up to 100 patients and 500 cafeteria visitors per day. Ensures daily staffing to ensure timeliness of service and standards of service. Hires, trains, and performs probationary and yearly evaluations to ensure employees are performing duties in a satisfactory manner. Works with employees to correct performance issues and coordinates with human resources on additional disciplinary actions as needed. I am responsible for updating performance guidelines to ensure we maintain compliance with hospital and Health Department regulations. I am responsible for storage, preparation, delivery, and disposal of foods as needed, ensuring proper guidelines and budget restrictions are followed. Worked as a Food & Beverage Supervisor at Sage Lodge. I supervised approximately 50 employees for two restaurants, one fine dining restaurant and one casual fine dining restaurant. I was the Employee Dining Room Operations Manager for eight employee dining rooms. I supervised over 100 employees located throughout Yellowstone National Park, which served approximately three thousand employees each season. My responsibilities included, but were not limited to, interviewing, hiring, training, and development of on-site employee dining room managers and their front and back of house teams. I presented approximately 50 ServSafe food safety classes each season, created training programs for employee dining room managers and their employees, created and implemented rules of the employee dining rooms, set cleaning and food safety standards for all locations, developed menus for all locations within budgetary requirements, developed recipes and recipe books for each location to utilize on a daily basis, created food preparation systems for each location, worked with food purchasing team to develop an ordering strategy and grocery lists for individual locations to ensure locations were regularly stocked with needed items. I also facilitated the opening of each employee dining room at the beginning of the season and closing at the end of the season. Throughout the season I visited employee dining room locations to ensure they were following the rules and regulations set by Xanterra and the National Park Service; this includes following menu specifications, recipes, food safety regulations and continual development of employee dining room managers and team members. I performed employee evaluations and documentation of performance issues. My responsibilities also included planning and implementing special events, such as Employee Appreciation dinners for each location.
