Duties include research and development of new recipes to fill the bakery case for 4 restaurant locations, preparing and finishing pastries according to specified formulas and procedures, seeking out new vendors for products to enhance and improve quality of pastries and baked goods. Overseeing and training bakers on new recipes and techniques. Assisting Pastry Chef with production scheduling and procedure changes to help improve efficiency and ease of production.

My duties include opening the bakery and preparing pastries for the hotel’s coffee and gift shop, distillery bar, Patisserie Du Jour for the Restaurant. I am also responsible for preparing and presenting pastries and desserts, including cakes and pies, for catered events, In addition I work in preparing bread doughs, pastry doughs, mousses, sauces, sugar cookery, chocolate tempering, anglaises, custards, icings and butter creams, fillings, food prep for garnishing and chocolate sculpting and decorating. I participate in keeping dinner dessert inventory and stock, cold storage temps, production scheduling, and shift supervision of employees.
