Hired to reorganize the wine program and support service in this Philadelphia landmark restaurant. The wine program was left unattended for quite some time and needed a great deal of work to become relevant for the clientele that was now patronizing the venue. Added many wines by the glass and bottle which fit better with the current concept and increased wine by the glass and bottle sales while maintaining costs at or below the budgeted percentages.
