Operations:

As an area troubleshooter, evaluated operation issues in Ohio and Pennsylvania. Set up programs to solve problems. Turned operation around from decreases to increases in sales and shopper report scores from lowest to highest within six months

Increased sanitation scores on monthly evaluations by developing and implementing daily and weekly kitchen and front of house cleaning schedules. Set up maintenance schedule for all kitchen equipment reducing wear and tear, breakage, downtime and employee frustration.

Reduced number of Cooks needed by 50% using own experience and ability to run high volume and stay calm under pressure. Trained others to run the exposition as a one-person position instead of two.

As a Food Service Director, managed school districts that ranged from two to six schools, grade levels PK-12. School populations were in ranges from a few hundred students to over 1000 per building.

Sales & Promotion:

Helped drive sales and meal participation in school districts by finding ways to use current USDA approved products while bringing innovative and desirable menu and a la carte items to the students – while still meeting the health demands of each individual district.

Negotiated with beer distributor to help him attain new accounts by paying for and setting up several displays in my restaurant as a test slot.

Developed several incentive programs to increase sales. Developed more in-depth training programs to increase sales.

Management:

Oversaw 13+ school districts within NH and VT during the school calendar year. During summer break, directed teams at 15+ summer camp facilities and summer feeding programs.

Took several underperforming facilities and turned them into profitable and model locations for the Fresh Picks Division of Café Services.

Became next promotable manager after one year of true “retail” experience, climbing over many 2+ year assistants with more experience with this major chain and overall retail experience.

Worked on customer retention by consistently following up with existing customers as products and services changed within the financial environment.

As a FSD and DM dealt directly with both school administration and parents to fit the demands of multicultural, dietary specific, and socio-economic areas and students within NH, MA and VT.
