Summary:

● Responsible for the total Profit and Loss as General Manager. Consistently achieved targeted budget and profit goals. Earned Marketing Restaurant of the Year (2007) for Morton’s in Rosemont.

● Achieved lower waste in F & L by applying due diligence to proper bar training and management. Oversaw all day-to-day operations, inventory controls, and personnel scheduling.

● Consistently asked to travel and correct operations in failing restaurants in Morton’s and Ala Carte restaurant groups. Traveled and worked in TX, St Louis, Minneapolis, and multiple local locations in Chicago land area.

Notable Achievements:

● Improved Moral by servant Leadership style, listening, led by example, and set high standards. This resulted in low turnover in Rosemont location of less than one per person per year(pre-Covid).

● Lowered personnel turn over, achieved several years with zero turn over.

● Lowered labor cost reduced wasted hours scheduled. Cross training allowed overlap in certain roles and times, resulting in less hours scheduled.

● Created a specific locally source wine list with higher-than-average margins resulting in more profit for location.

● Historically high rate of assistant managers promoted to General Managers under my tutelage, 8 in total. In addition, promoted 14 captains to Asst. Managers

● Part of a small group of managers that assisted in the regular update to Morton’s wine list and featured cocktail menu.
