Prepared, coached male inmates to prepare 3 meals per day for 350-500 incarcerated persons daily. Breakfast was at 3:30am, lunch at 8:30 am & dinner occurred at 4pm. Supervised 10-23 workers on the midnight shift to 11am shift. Planned special events, trained dietary workers in inventory, sanitation, cooking and meal preparation for 10 years. Trained new dietary officers in food preparation upon entry into prison setting after graduation from The Academy in Sykesville Maryland. Prepared 200 lunches five days per week for 20 road crews exiting the compound daily.
