Work Experience

Food and Beverage Director/ consultant

October 2022 – October 2023 Bayville Golf Club, Virginia Beach, Va.

This elite club was closed for renovations to the course, clubhouse and restaurant for most of 2022 and reopened in November 2022. I was hired to implement all systems and processes needed to ensure the food and beverage department complemented one of the most prestigious golf courses in Virginia with membership satisfaction. New menus, service standards, theme nights, member events and even the snack bar products were of the highest quality. The role out was a hit with membership.

General Manager

August 2019 – October 2022- Chili’s, Norfolk, Va.

Hired to revitalize unit located on the Norfolk Naval Base. Completed Chili’s general manger training at their training store in Chesapeake, Va. Goal was to ensure all brand standards were being followed and to bring back profitability to this busy unit. Full profit and loss responsibility, hired staff and reorganized operations to ensure profitability and guest satisfaction. Guided the operation through the pandemic and ensured a new rec=venue streams with the push on more TOGO sales and offering delivery.

General Manager

December 2018 – July 2019- 11th Street Taphouse, Virginia Beach, Va.

Hired to reopen this busy Oceanfront Restaurant that was closed by ownership for mismanagement in November 2018. Mandate was to hire new staff (Front and Back of the House), implement new systems and processes to ensure a clean and profitable operation. Implement new menus, establish standards of cleanliness an organization, remodel and clean existing physical plant, set up hiring standards and practices, payroll system, new beer and drink menus ( thirty-two beers on tap), set up budgets and forecasts for sales and labor, reprogram point of sales system, marketing and entertainment. Oversee all aspects of the total food and beverage operation and ensured compliance with all Hilton brand standards.

Food and Beverage Director

February 2017 – December 2018- Renaissance Hotel, Portsmouth, Va.

Oversaw total food and beverage operation for this 250 room full service Marriot Branded Hotel. Oversaw restaurant outlets, bar, concierge lounge, room service and banquet facilities for this busy convention hotel with many banquet events exceeding two thousand guests. Hired and trained management, ensured compliance with all Marriot brand standards and audits, budgeting, ordering equipment and small wares, oversaw all inventories, ensuring a smooth and profitable operation.

2013- December 2016 –Lone Star Steakhouse, Chesapeake, Va.

After completing the12 week “Manager in Training “ program, took over the General Manager duties at the Chesapeake, Va. location in April, 2013. The goal being to revitalize and turn around this under-preforming outlet. Reversing the trend of this outlet with negative growth for years, into one of the top preforming outlets in our region. with positive sales year over year, increasing our customer satisfaction scores dramatically, reducing turnover rate of team members and developing a management team dedicated to customer service and adhering to 100% Brand Standards.

2012- 2013 –Thirty7North Restaurant, Virginia Beach, Va.

Hired to manage the remodeling and opening of this brand new restaurant concept. Assisted in the design and construction, ordering equipment and small wares, establishing systems and process’s to ensure the timely opening of the hottest new eatery in Hampton Roads. Hired and trained staff, developed operational systems, manuals, human resources, and set the tone for a successful operation. Thirty7North was voted best new restaurant in Virginia Beach for 2013 by Open Table.

Beverage Manager / PM Dining Manager

2009-2012 – Catch 31 Fish House and Bar, Virginia Beach, VA

Managed bar and PM dining operations of the industry leading food and beverage outlet in Southeastern Virginia with annual sales over 15 million dollars a year. Duties included: Hiring and training bar and cocktail staff and wait staff, ordering and receiving spirits, managing and marketing bar events, live entertainment and DJ’s, inventory, closing restaurant duties and cash handling responsibility.

Owner/ Managing Partner

2007 – 2009 Texas Ranch Steakhouse, Virginia Beach, VA

Developed the concept for the design and construction of this 215 seat steakhouse. Implemented systems and processes to ensure a smooth and timely opening of the restaurant. Took lead in interviewing and hiring staff, purchasing of all equipment and small wares, accounting functions, menu development, marketing, permits and inspections, licensing and training.

Food and Beverage Director

2003 – 2007 PGA TOUR-Tournament Players Club, Virginia Beach, VA

Hired by the PGA Tour in January of 2004 as the Food and Beverage Director of The Tournament Players Club of Virginia Beach.

The focus being to change the environment of this underperforming club and instill the PGA Tour experience to our members and guests.

Made many changes, taking over the duties of the executive chef as well as the catering and sales manager.

Hired and trained a completely new staff, implemented new sales and marketing programs, and created a healthy work friendly environment.

In 2004, awarded the "Fish Award", presented by the PGA to the food and beverage outlet which has the highest marks in the employee satisfaction survey. The award is named after the famous "Pikes Fish Market" in Seattle.

In 2005, we were awarded "Outstanding Food and Beverage Outlet Award" an award I’m most proud of considering the quality of the other twenty three TPC's.

Continued our progress with record profits and sales in 2006.

F&B MANAGER

1995 - 2003 Mahi-Mah’s/ Rockfish Sea Grille, Virginia Beach, VA

Hired as Beverage Manager 1995. Created promotions to develop the bar into an industry leader earning many accolades. Developed a wine program second to none in the Hampton Roads area (rated 4 1/2 Stems by Port Folio Magazine).

Promoted to Assistant Food and Beverage Manager in 1997, and Food and Beverage Manager in 1999. As a team we developed and implemented many new systems and processes to take this organization to the next level.

Mahi-Mah's was awarded runner-up food and beverage outlet in the Ramada Chain world-wide in 2000 and outstanding food and beverage outlet for 2001.

With record sales and profits, increased guest satisfaction, and over one hundred highly motivated employees we set the ground work for future outlets and opportunity.

Promoted to Managing Partner of Rockfish Sea Grille I took the lead in staffing and preparing for operation this hot new eatery.

Owner Operator

1985 -1994 Offshore Cafe and Raw Bar

Owned and operated this popular oceanfront bar and restaurant. Complete control of operation from hiring, training, accounting, and building from scratch this location. The location became one of the most beloved watering holes in the area.
