Appalachian State University (Boone, NC) January 2022 – Present Adjunct Instructor

• Lead “Introduction to Nutrition,” a general education course required for all App State students.

• Manage instruction, grades, and curriculum for 40 – 46 students per semester.

• Encourage students to not only learn the material but also identify healthier choices and strategies for their long-term health decisions, as well as menu planning.

Watauga Medical Center (Boone, NC) September 2021 – Present Clinical Dietitian

• Meet with 15 – 20 patients daily, specifically with oncology, cardiac rehab, and inpatient acute care.

• Document nutritional assessments for each patient, develop nutrition and menu plans; communicate dietary recommendations to patients and their families.
