The objective of the project was to investigate the increment in nutritional quality of fruit juices after probiotic fermentation using different strains of Lactobacilli and optimize the conditions for production of a functional drink.

Isolated different strains of lactobacilli using selective media, extracted fruit juices, carried out fermentation of fruit juices using these different strains at different conditions and different biochemical assays were used to assess the nutrient content.
