I say I have a P.H.D. with ** plus years of beef production and management with a total of 50-70 employees. Born in the third generation beef slaughtering family business. In 1967 at the age of 18 years I started heading and shrouding beef cattle. I quickly moved up in job position. Siding,rumping and splitting the carcass. The operation was small, but was one of the largest beef boning companies in the area. In 1985 the company was handed down to me I operated it for 5 years. It was the start of change in the industry. Coupled with a large drop of market prices the company struggled to regain it’s position of the market share. With a large responsibility to move the family business now in the fifth generation forward it was time to close the company in 1991. It was the end of 24 year experience in the beef slaughter business.
