Regional Executive Chef
Oversight of multiple units and working closely with the VP of Culinary to overhaul the existing bar & restaurant
model to transition into a fully scratch culinary operation. This overhaul included intensive removal of most all frozen
items, transition to freshly made desserts, extensive in-house prep additions including all dressings, sauces, marinades
and more. In addition to assisting in the transition of culinary operations, also worked to enhance day-to-day execution
including creating systems and monitoring measures for Chef teams to utilize daily to deliver quality impact in
execution. Additional oversight of budgets, food costs, controllable expenses, development of bench teams and
complete property oversight with a focus on bi-weekly prime cost control.
