SLAUGHTERING PROCEDURES (swine)
1.Prepare/shower the animal.
2.Stunning box/Restraining Box to observe animal welfare.
3.Stunning with use of electric stunner.
4.Shackling the animal at the joint.
5.Lifting with use of elevator animal to execute sticking.
6.Sticking with the use of stick knife at the neck region.
7.Scalding to lose the hairs for effective dehairing.
8.Transferred in the dehairing machine for proper dehairing.
9.Secondary dehairing manually to remove left-over hairs.
10.Gambrel hanger in form and is placed at the hind feet.
11.Singeing with the use of blow torch to burn fine hairs.
12.Open chest boneby cutting the sternum at the middle.
13.Opening the pelvic bone at the center (symphisis pubis).
14.Using string-straw rubber band ring and tie the bung.
15.Expose tendon by incising the ventral portion of the tarsal and metatarsal bone.
16.Evisceration which is removal of the internal organs.
17.Remove sex organ if male.
18.Present Offal for inspection of veterinarians for post-mortem inspection.
19. Splitting with the use of circular saw, carcass is cut into halves.
20.Washing/Trimming of hematoma, cyst, dirt and lymph gland.
21.Grading the carcass thru back fat thickness and size of loin muscle.
22.Weighing the carcass either manually or digital weighing scale.
23.Chilling at +5oCelcius for 24 hours.
