Overview:

In my travels I have become Chef de Cuisine of one of the best restaurants in Lake Tahoe and Chef of Spur Gastropub also one of the best in Seattle. I took pride in working as closely as possible and keeping good relationships with local sustainable farmers/fish mongers and my purveyors. I have abundant experience in menu development and extensive knowledge of modernist technique and equipment. I feel competent and well versed in most cuisines, though my focus has always been driven towards Japan and Korea because I highly regard their flavor profiles, discipline and technique involved in the food and culture. I've always felt as a leader in the kitchen and very much enjoy teaching people to better themselves and take pride in their product and work ethic. I myself feel that there has to be a high level of quality, technique and pride put into the raw ingredient to create an amazing product and experience for client.
