LEAD COOK

Determines how food should be presented, and create decorative food displays.; determines production schedules and staff requirements necessary to ensure timely delivery of services.; estimates amounts and costs of required supplies, such as food and ingredients.

Plans daily meals and ensure ingredients/supplies are available; responsible for placing an order for needed food items; directly supervises and oversees the other cooks to ensure that they are following the kitchen rules/protocols

Inspect supplies, equipment, or work areas to ensure conformance to established standards; order or requisition food or other supplies needed to ensure efficient operation.

Collaborate with other personnel to plan and develop recipes or menus, taking into account such factors as seasonal availability of ingredients or the likely number of customers

Instructs cooks and other workers in the preparation, cooking, garnishing, and presentation of food; enforce consequences and understand rules, consequences, policies, and the basis for them; adhere to and follows standard food permit regulations; always be aware of and use safety precautions that would eliminate or reduce accidents.

LINE COOK FOOD PREP

Grill, cook, and fry foods such as French fries, eggs, and pancakes, washes, peels and/or cut various foods to prepare for cooking or serving. Stock cupboards and refrigerators, and tend salad bars and buffet meals; uses manual and/or electric appliances to clean, peel, slice, and trim foods; stirs and strains soups and sauces; mixes ingredients for green salads, molded fruit salads, vegetable salads, and pasta salads.

Prepares and serves a variety of beverages such as coffee, tea, and soft drinks; carries food supplies, equipment, and utensils to and from storage and work areas; makes special dressings and sauces as condiments for sandwiches.

Loads dishes, glasses, and tableware into dishwashing machines; butchers and cleans fowl, fish, poultry, and shellfish to prepare for cooking or serving; cuts and slices; grinds meat, poultry, and seafood to prepare for cooking; removes trash and cleans kitchen garbage containers; scrapes leftovers from dishes into garbage containers.

UTLITIES WORKER

Cleans, mops, sweeps and dusts kitchen facilities; Requisitions supplies from stockroom; receives, stores and distributes supplies; cleans, washes and polishes equipment; changes light bulbs, stacks and arranges chairs and does other miscellaneous jobs; Makes minor repairs on equipment and facilities; makes deliveries and pick-ups for catering functions.
