I opened the department from a shutdown (they were considering outsourcing the F&B) and turned it into the only profitable department. This includes menu development, vendor negotiation and account set up, staffing, POS programming, organization and policy and procedure implementation.
I directed the operations for banquets, catering, the lounges, casual and fine dining restaurant, room service, coffee shop, and kitchen facilities. I always came in under budgeted expenses by at least 4%, labor by 6% and cost of goods by 5% and maintain a very high overall satisfaction index. This was done through strategic partnerships and creative marketing.
