Responsibilities:

Monitor, train and supervise prepared meals to ensure they comply with dietary meal cards and chart documentation. Responsible for the development and training of work assignments, maintaining accurate and appropriate records, reports, files and schedules for all dietary staff, assigning specific jobs and performing quality checks on a regular basis to ensure that all State, Federal, Community and SLC standards are met. Develop, implement and maintain written policies and procedures pertaining to the ongoing functions of the dietary department. Coordinate staff education with the Servers to provide monthly in-service training on dietary policies, procedures, sanitation, food safety and diet preparation. Ensure that the kitchen meets all sanitation and food handling regulatory requirements as set forth by the State, Federal, Community and SLC. Conduct nutritional assessments on all residents in the skilled nursing and long term care departments within 72 hours of admission. Complete all documentation to comply with State, Federal, Community and SLC regulations and expectations. Observe residents' eating habits and monitor dietary problems. Conduct regular meal rounds. Participate in the cost control measures and budget implementation. Maintain confidentiality of any and all resident and employee protected health information according to HIPAA rules and regulations.
