Providing a comprehensive catering service in private homes and other venues for family or special events
At Ballymaloe International Cookery School, Midleton, Co. Cork (September 2012 – December 2012)
This was an intensive 3-month Chef Training Course dealing with all aspects of food, preparation, cooking and presentation under the tutelage of the internationally recognized Dr. Darina Allen. The course concluded with a series of lengthy practical and written examinations and I was subsequently awarded certificates confirming my success.
House Manager/Chef at Acorn Garden Centre, Portlaoise, Co. Laois (April 2009 – September 2012)
Had full responsibility for the smooth running of large country house while owners were engaged full-time in the expansion and development of a large garden centre. While I was required to work on my own initiative when purchasing ingredients, the preparation and cooking of same for the family I was also required to manage the provision of barbeque food, finger snacks and refreshments at occasional promotional events for specially selected Garden Centre customers.
Took contract as Chef/Restaurant Manager at Golf Club (April 2008 – April 2009)
This involved the preparation of breakfasts, lunches and dinners for golfers, their families and guests. Preparation of menus and organization of special functions. Selecting and purchasing quality fresh foods and ingredients. Selecting, training, and supervision of restaurant staff and kitchen assistants.
Cook-Housekeeper at Kilquade House, Co. Wicklow (April 2007 – March 2008)
This large period house and estate was owned by an Internationally known American business man and his family. The functions involved cooking, devising and selecting menus, purchasing quality ingredients, cooking, directing and supervising cleaners and other household staff
Returned to Ireland in June 2006 to look after Mum who was quite ill and who passed away in April 2007.
House Manager/Chef/ Personal Assistant (November 2004 – May 2006)
Had full responsibility for the running of a large house in Ascot, Berks, owned by a distinguished aristocratic Italian family. Assisting with young ladies when in residence, and assisting Estate Manager when required. Catering for family when in residence and arranging dinner parties. Assisting owner in taking phone calls, faxes and ensuring that all aspects of household ran smoothly. Greeting guests and family on arrival etc.
House Manager/ Personal Assistant (December 2002 – October 2004)
This entailed full responsibility for the smooth running of a large house in Hampstead, London. Assisting with children. Catering for family Supervising and motivating other household staff. Managing household business when required or in house-owner’s absence.
Housekeeper / Personal Assistant (January 2001 – December 2002)
Full responsibility for the running of a large house in Regents Park, London, which was owned by a leading corporate businessman. Assisting with children when in residence. Catering for family. Supervising outside staff. Looking after country house when required.
Housekeeper / Personal Assistant (December1997 – January 2001)
Had full responsibility for management of this household in Hampstead, London, which was owned by an eminent Doctor and Author. It involved looking after four children, catering for family, including dinner parties, Chauffeuring guests, interviewing, recruiting and supervising outside staff for this large house.

This was a a popular 52-seat restaurant catering for English, French and Vegetarian cuisine. It was purchased from me in 1990 on terms that were difficult to refuse.
