This was my first job, worked as a dishwasher, I was happy because it was my first job and I receive my first paycheck
Tratoria De Arte 1989-1990
Worked the preparation station which included task such as:
Making salads
Fileting fish and meats
Learned here how to make all the mother sauces and pesto
Le Madri Restaurant 1990-1992
At Le Madri I worked along side executive chef Martha Pulini on the pasta & grill station. During this time the restaurant was very popular so I got to feel the busy rush feeling while I was working here.
Barolo 1992-1994
During my time here at Barolo I manage to learn more cooking technique on the grill by working along side executive chef Genaro. I really like this job because the chef was very responsible while working on the line. He really liked his dishes to be clean and tasteful this is where I learned the passion of presentation.
Serafina 1994-1995
While working at Serafina I worked the grill station, I really enjoyed my time there working along side chef Giorgio Rochi because of his passion he had for food and his experience with the Italian Cuisine.
Lumi Restaurant 1995-2013
Started working since the first day it open until the day it closed, worked along several chef like Anna Burrell and other great chef. Was the chef de cuisine here at Lumi as chef de cuisine I multi task:
Prepare all home made sauces and soups
Prepare fresh pastas from Gnocchi, Fettuccine, Black Fettuccine etc.
Worked mainly the pasta, grill station.
Also learned how to manage my team while working here, and the process of making a menu.
Cafe Fiorello 2013-Present
I’m currently working here at Caffe Fiorello on the pasta station along chef Brando de Oliveira.
