• Experiment was designed to check the effectiveness of acidifiers
and preservatives against Listeria species which effect sweet potato
puree at 4c during storage.

• Addition of acidifiers and preservatives reduces the growth of listeria species
effectively, But most effectively reduces the growth by acidifiers when
compared to preservatives.
• In case of preservatives 5mM sodium benzoate concentration reduces the
g rowth to 6 Cfu/plate and 12mM of sodium benzoate reduces the count to 19
Cfu/plate.
I n fluence of different concent ration of sanitizers and contact
t ime on pathogenic bacteria which contaminate food products.

Conditions:
• The efficiency of sanitizer depends on the concentration and the contact t ime.
Choosing the effective concentration is very important and is a part of cost
effective program,
• Hydrogen peroxide is effective against S.aureus at 1.4% at 25 minutes contact
t ime and against E.coli at 0.8% at 18 minutes contact t ime.
• The sanitizers used in our experiment follow microbiological standards
recommended by legislation.
