Scope and general purpose complete responsibility for the highest level of
sanitation and hygiene standards in the production facility. To ensure all
food served to guests and employees are free from microbiological and
physical contamination, and all work areas confirm to minimum requirements
set by the local health authorities. Responsible for Daily and periodic
standards compliance monitoring in all departments, services within the
units and ensuring that the agreed corrective, preventative actions are

. Floor, ceiling, drainage, chillers, dishwashing machine and
kitchen equipment must be kept in good working condition
. Tracking system for control of supplier operating licenses
. Daily checklist by shift for chillers temperature control
. Control of dry store food rotation
. Daily spot check on storage conditions and holding temperatures
. Food stock rotation practices implementation
. Segregation of all raw and cooked food procedures is strictly
observed
. Temperature and time controls are in place to ensure that all
cooking is thorough and properly carried out
. To ensure appropriate holding for at hot temperatures until
serving
. Food not consumed must be disposed immediately
. Recommendation for further improvement
. To ensure HSEQ / IMS adequate tools are made available to ensure
legal compliance
. All related legal applications are made and executed
. Incidents are investigated and adequate corrective measures are
implemented and communicated to the business
. Ensure that all safety, firefighting and first aid facilities are
kept in working conditions
. Coordination and review of environmental and risk management
activities with all concerned and external/internal auditors
. Develops, conducts & supervises practical emergency simulations
exercises, training programs, safety meetings
. Ensure that all the company's HSE requirements as detailed in the
health, safety & environmental management system are implemented
and maintained in all existing and new sites
. Monitor compliance to essential safety and HACCP requirements,
update that all information material and ensure that updates are
effectively communicated to all operating divisions
. Collaborate with HR training team to; develop and continually
update training material and information for essential safety, food
quality & safety, HACCP and environmental risk management
. Conduct pre-opening risk assessments in terms of essential safety,
health act compliance, HACCP requirements
. Undertake planned routine safety, food quality & safety, HACCP
audits and environmental risk audits, to ensure ongoing awareness
of need to minimize risks
To Implement Cleaning
. Sanitation / Disinfection of all critical surfaces and utensils
. Correct concentration for chemical products
. Application of correct chemical for correct use
. Items protected from contamination after disinfection
. Suitable methods are used to make sure that cleaning is effective
. Cleaning products are to be safely stored away from food
. Cleaning products are to be properly labeled and identified
