2 Selected Accomplishments
Currently doing freelance work for new concept, All The Perks Espresso
Cafe. Developing design criteria for Cafes, Kiosks and Double Drive-Thru
units. Specifying materials, equipment, and doing install work. Also doing
3D models of custom equipment cook lines and service lines for another
consultant. Working on projects across the US and in the Russian Federation
and now Dubai.
Designed customized cafes, supporting national expansion of Bear Creek and
$250K increase in revenue. Joined small company with minimal design and
construction capability or understanding of code requirements. Created
drawings; established design, equipment and construction standards working
with operations to get their goals successfully across. Added 17 full
service cafes, 10 coffee carts, and 10 modular units in two years, up from
two units in prior year. One of these projects was for a caf in the Green
Zone in Bagdad.
Led major remodeling project for Restaurant Developers, enhancing image and
boosting sales $1.5M. Developed practical approach to modify buildings and
interiors for 60+ stores, allowing full operation during construction
period. Specified materials and equipment, and managed labor.
Negotiated vendor contract, saving $360K annually with volume discounts at
Restaurant Developers. Company adding two stores per month nationally and
needed consistent, cost effective pricing on store equipment packages.
Provided prototype unit specifications, managed RFP and review process, and
negotiated deal cutting costs $80K per unit.
Being a member of FCSI. This has lead to numerous opportunities for
continuing learning and training in various equipment lines across a wide
breadth of equipment products.
Panels & Groups. I have participated in several panel discussions sponsored
by Foodservice Equipment Reports, Foodservice Equipment & Supplies and
Ideas Well Done as well as being a member of NSF Standing Task Group for
Facilities Design:2000 & Contributing author and Task Force member of
NCEMBT for IEQ (Indoor Environmental Quality). Member of MAECO, Multiunit
Architects, Engineers and Construction Officers. An Educational Study Group
of the National Restaurant Association. I served as Chairperson; 2000
through 2004.
